Protein , and Dietary Fiber - rich Excretion of Feces and JejunumNew Foodstuff from Brewer ' s Mucosal Protein Content in Osamu

We made a new protein-rich and fibrous foodstuff by mi]ling and sieving brewer's pent grain. This product contained glutamine-rich protein and the dietary fibers cellulose, hemicel}ulose, and lignin. We called this produet germinated barley f(K)dstufi (GBF). GBF had the effect of increasing feca] dry weight and number of fb{ es and of significantly inereasing jejunum mucosal protein content in rats oyer the cellulose group. In GBF, Gln.rich protein is tbought to have strorrg chemical bonds with dietary fiber, an arrangement which would be important in the way these physio)ogical effects arise. As dietary supplements of Gln or dietary fibers (i.e., cellulose, hernicelllllose, lignin, and a mixture of these) did not improye defecation and jej"num ucosal protein simultaneously, the efibcts of GBF are thought to be cRused not by the individual ingredients, but by the combination of protein with dietary fiber.
